A Berry Apple Dessert

Random confession. I’ll always choose a fruit-based dessert over a chocolate kind of anything. And for the last few weeks, this berry apple dessert is what I’ve been having on repeat. It’s super quick and easy to make, only about 20 minutes from start to finish. It’s also gluten-free, vegan, and can be made with no added sugar if you want. And it would still be a treat!

A Berry Apple Dessert

Ingredients

  • 3 apples. (best apples for cooking)
  • 1.5 cups mixed berries
  • 2/3 cup brown sugar
  • .1/2 cup water
  • 1 Tab cornstarch
  • 1 Tea vanilla
  • 1/2 tea cinnamon
  • 1/8 tea cardamom

Directions

A Berry Apple Dessert
  • Start off by washing and peeling your apples. Then cut them into 1/4 inch slices or chunks.
  • Add them to a nonstick pan and then pour in your berries. Don’t turn on the heat yet. I always have frozen berries in the house, so I use those to make things easy. It’s usually a mix of blueberries, blackberries, and raspberries.
  • Next add the sugar, vanilla, cinnamon, and cardamom and lightly stir everything together so all the apples and berries are coated.
  • In a separate container or cup add the cornstarch to warm water and whisk till dissolved. Don’t use cold water. The cornstarch will clump into little balls and will make dissolving it difficult.
  • Turn the flame on to medium-low under the apples and berries and add in the water/cornstarch mixture. Cover with a tight-fitting lid for about 10 minutes stirring occasionally.
  • If you find that the cornstarch has become too thick you can add a little water. As the apples cook though, they will add more moisture to the pan, so only add a little water at a time.
  • When the apples are tender turn off the flame and allow it to cool.

Enjoy

Depending on what mood I’m in and on the weather, I’ll have eaten this one of two ways. Sometimes I’ll serve it warm with a scoop of ice cream on top. Or I’ll allow it to completely cool in the fridge and then have it with ice cream. Both ways are amazing!

Also, if there’s any leftover I’ll add it to the next morning’s oatmeal, or as a topping on my pancakes.
