Cheesy Vegan Tofu Scramble
For those of you who don’t know, a tofu scramble is basically the vegan version of scrambled eggs. Really it’s my favorite breakfast choice for several reasons. It’s high in protein and low in carbs. It’s pretty quick to make, so great for when you’re low in extra time, and you can add your favorite veggies to it and make it even better. Lastly, because it’s not a heavy meal, if I’m going to eat before working out, this is what I’ll have. So, let’s get to it!
Cheesy Vegan Tofu Scramble
You can always play around with types of tofu to find the consistency you like the most. Basically, the firmer the tofu is, the higher in protein, but it also has a dryer consistency. I prefer to use extra-firm tofu for my scrambles. And my favorite brand is Wildwood. It’s USDA Certified Organic, Non-GMO, Kosher, dairy-free, and gluten-free. Here’s everything else you’ll need.
Tofu Scramble Ingredients
- 14 oz pack of tofu chopped into cubes
- 3/4 cup Violife vegan cheese
- 1 cup Sliced Mushrooms
- 2 cups Baby Spinach
- 1 Yellow Squash
- 1 Zucchini
- 2 Tab Chopped Cilantro
- 1 Tab coconut oil
- 1/2 Tea Tumeric
- 1 Tea Chef’s Shake (my favorite spice blend)
- 1 Tea Salt
- Pepper
Directions
- Melt the coconut oil in a nonstick pan over medium heat.
- Add the tofu and use a fork to mash until it’s scrambled.
- Add the turmeric, Chef’s Shake (or an all-purpose seasoning you prefer), and salt.
- Lightly stir until it’s mixed.
- Add the sliced mushrooms and cover with a lid for 3 minutes. Remove lid and add the zucchini and squash. Then allow cooking for another three minutes while occasionally stirring.
- Add the washed baby spinach and allow to cook until fully cooked down.
- Lastly pour in the cheese and mix until it’s fully melted
- Turn off the flame and sprinkle the chopped cilantro over the top.
Add your salt and pepper and enjoy with a slice of toast!
Other Options
Of course, you can always play around with other veggies to add to your Cheesy Vegan Tofu Scramble. A few other options that go very well are red bell pepper, onion, baby kale, and riced cauliflower. As well as toppings like sliced avocado and hot sauce are always good.
